I’ve been calling this an American cow-milk Manchego (see here) for years. Partially it’s the waxy, basket-weave rind and the dense, granular texture. But more so its sweetness. The six-plus-month original is all coconut and Werther’s Originals. The fifteen-plus-month reserve looks fearfully waxy and dry, but under tooth is the equivalent of Girl Scout Samoas: coconut, cocoa, and buttery crunch studded with protein clusters so dense they’re not crystalline as much as food unto themselves. By comparison, the original seems almost boring. The rusty rind is rubbed in a proprietary spice blend including cinnamon and paprika, which may well contribute to the aromatics. I guess this is the cheese equivalent of a juicy red wine—something wine folks might call pedestrian. Laypeople, on the other hand, rave at its deliciousness and gulp it down. Eat on!
